My dad inherited a M1911 and M1 Carbine from my grandfather. Do either have to be registered or otherwise documented? I am pretty sure neither was registered before.

NO, you do not have to register them. There is no gun registration in Missouri. Untill AUG 28 2007 there was a permit to purchase a hand gun. As long as you or the owner of the weapons has proof of where the gun's came from, that they are not stolen You are not going to run afoul of the law. I would caution you to not tell people you don't know much about them If they are bring backs. The 1911A1 ,Depending on the manufacturer will bring $800.00&up, The M-1 $400.00 & up. JUST Ballpark figures.

OLDAO is correct, I would add that Federal Law is you have to be 21 to own handguns, you can carry it loaded and concealed in an auto if you are 21 but you need to be 23 to get the CCW to carry on your person.
The Missouri Attourney General's website has some real good info on the law.
