I can't say for sure, but I believe Security Forces is in demand. Often it's things with a likelihood of being in combat, and/or a high AFQT requirement. But also, I have heard that the Air Force is downsizing, so they probably have very few high-demand jobs.

Wow, the Air Force is downsizing? News to me, last I heard is that our numbers are going up. We are restructuring and moving people around, but the total number of Active Duty Air Force members are higher than last year and next year will be higher.
To answer the question of the OP, every job is in demand. The largest career field is Security Forces, but we are always looking for special forces, mechanics, Intel, and Electronics. My best advice to you and everyone else is this: Look at your ASVAB scores and list the ones requiring the highest scores that you qualify for.

The USAF is hiring 150 to 200 more recruiters, so you can squash the USAF downsizing. Numbers are going up.

Also, the word is that the new GI bill may have a negative effect on retention. That would mean more slots need filling...
