I've signed up to be a crypto linguist with the Army, and I got my DEFLANG (DLI) reporting date. I was just wondering when one finds out what her/his target language at DLI will be. I've read some conflicting posts: some say it's when you're near the end of BCT; others say when you're at DLI.

Also, I compared my DLI reporting date against DLI class report dates on ATRRS, and I have three Arabic classes that exactly coincide with my reporting date (Their actual class start dates are a few days later). Does this mean it's likely that I will be assigned Arabic?

My native language is one of the languages Army Linguists get taught in, and my hope is to get my language promised in the final contract. But learning a new language is also an option. I've read that it's hard to pass the DLPT for Arabic. If I make all the way through the class but fail the DLPT, would I be able to keep my MOS if I pass the DLPT for my native language?

You will not know your language for sure until you report to DLI. You should get an AKO email with your class reservation and start dates. I would trust the email much more than I would trust your orders. The orders I received at the end of BCT said I would be in Farsi, but when I got to DLI I checked my email and had an email telling me I had a class reservation for Chinese. I ended up in Chinese.
