Graduated DLI back in 2000, but back then we had over two weeks. We left the weekend before Christmas and were due back the first workday after New Years.
This year you've probably got a sweet deal. Your last day of class should be 18DEC and you won't have to report back until 5JAN. It's the same schedule I had when I was there (on that whole '6 year cycle'). Congrats on timing your arrival perfectly.
I know Christmas exodus is determined by some higher power, nobody actually at DLI, and I assume it is TRADOC. But they set exodus dates, and the individual posts/battalions are allowed to deviate by up to 2 days on either side. It seems as though DLI gives all 4 of those days whereas Goodfellow gives none of them.

No, but there is a class break, which is kind of like spring break. As the DLI academic cycle for any given language does not adhere to a traditional academic calendar, usually either the students (under the leadership of the student class leader) or the instructor staff will determine when the week-long class break will take place. Most try to put it in the middle of the class cycle, but the first time I went to DLI and was in a one-year program, we chose to hold ours during a stretch of time when there weren't any training holidays or four-day weekends. On the other hand, CAT-I (Spanish, French, etc.0 and CAT-II (German) courses sometimes require students to take their class break in conjunction with a training holiday, since they have so little time to teach a language in the first place.
