Chili Mac

Ingredients:
1 pound ground beef
1/2 c. chopped onion
1/2 c. chopped green bell pepper
3 cloves garlic, minced
1/2 box elbow macaroni (4-6 ounces), cooked
1/2 c. water
1 tbsp. chili powder
1 tsp. ground cumin
1/4 tsp. black pepper
1 14-ou. can whole tomatoes, undrained & chopped
1 15-ou. can kidney beans or chili beans,drained
1 8-ou. can tomatoe sauce
1 6-ou. can tomatoe paste
1 cup shredded sharp cheddar cheese

Directions:

Cook first 4 ingredients in a large Dutch oven over medium-high heat until browned, stirring to crumble beef. Drain the drippings. (I use 96% fat free ground beef so there really aren't any drippings).

Stir in cooked macaroni and the rest of the ingredients except for cheese. Bring to a boil, cover, reduce heat and simmer for 20-30 minutes, stirring occasionally.

After serving, top with shredded cheese.

Yum! If you like it spicier, add more chili powder to taste.

Spicy Pasta(my name)

Mind you I have no rhyme or reason when it comes to making this, just throw it together.

-A box of Penne Pasta
-A package of Johnsonville(or whatever brand) of Italian Sausage
-Red pepper flakes
-Two garlic cloves
-1 cup Heavy Whipping Cream
-Olive Oil

Boil pasta
Remove casing from sausage and saute in pan w/ olive oil.
Add red pepper flakes and two cloves of garlic.
When sausage is done, add the one cup of Heavy Whipping cream.

When that has settled and pasta is done, add together.

Make a nice basalmic salad and crusty bread to go w/ it.

These fudge recipes take less than 10 minutes and are wonderful.

Peanut Butter Fudge
1/2 c butter
3/4 c peanut butter creamy
4 c powder sugar
1/4 c milk
1 tsp vanilla

microwave butter until soft (20-30 seconds)
add peanut butter ,powder sugar,& milk
stir together
microwave for 3 minutes
Add vanilla, stir pour into 8by 8 pan. let cool then refrigerate to harden

Chocolate Fudge

1 pound powder sugar
1/2 c unsweetened cocoa powder
1/2 c butter
1/4 c milk
1/2 c nuts ( if desired)
1tsp vanilla

mix sugar & cocoa powder in microwave dish Drop butter in pieces into mixture, add milk.

Microwave 2-3 minutes, until bubbly. Stir lightly. add vanilla & nuts. Pour into dish . Refrigerate at least 1 hour.

Nope!! My friend gave me that particular recipe because I'm not big on baking and I hate flour messes. It's a great recipe, sent about 2 dozen to DH last week and they've already been eaten. Smile

Can't wait to try that fudge if DH says he's interested. Smile

I threw out the wrapper before I could type it up, but I just wanted to let everybody know that the recipe on the back of Ghiradelli Chocolate Chips for chocolate chip cookies is fantastic, just made them tonight and they were awesome. Smile

Chicken Filling

I got this idea from Jen's baby shower actually. I just made it more of the "white trash" way. You can fill cresent rolls and make a pocket, put on rice or noddles, put in pie dish and drop biscuts(sp?) on top and bake .... endless dinner options!

2 cans of Tyson white chicken (in pieces)
1 small jar of Veggie cream cheese
1 small can of corn
minced garlic - to taste
onion powder - to taste
pepper - to taste

Add all everything into a frying pan in stove and cook until heated all the way through.
Then use as you wish for your dinner!

Anybody have any good/easy crockpot recipes? I'm talking like 5 ingredients or less, I'm on a budget. Smile I need something to take to a group dinner Friday night, and at this point my budget is so tight I'm about to just make chili con queso haha. Real food with some nutritional value would be much appreciated. Smile

If you can grab some stew meat, mix vegg frozen bag, potato's and white rice .... that should work out ... just season it. And some beef broth

So, I ended up making cookies because peanut butter is cheap. The recipe that I posted like two pages back - I just wanted to add an "option" to the recipe.

I baked them as normal, and as soon as they came out of the oven I put Hershey's Kisses and Reeses Cups in the middle and let them set before moving them off the pan. They're even more delicious now, because there's chocolate involved. Smile

Mmmmm, the recipes make my mouth water reading them Smile. I did notice that one of the recipes has Poppy seeds though. I remember a previous commander telling us to avoid foods with poppy seeds or you will provide a 'positive' urine specimen if you were to give a urine sample for a drug test. The same commander also told us to stay away from certain tanning lotions with hemp in it or the same thing would happen. Soooo... don't know if there is some truth in what he said or if was just being overly cautious, but figured I'd throw that out there Smile.

If anyone wants to shed some light on these tales as to whether they're true or not please feel free to do so Smile.

And I guess since it's lunch time here I better go eat or I run the risk of drooling on myself even more with all these delicious recipes Razz.

krestina, as far as I know, they are true. So yes, avoiding them would probably be smart. Well, maybe not avoiding all together, just don't eat a butt load of it. Smile

I ate poppy seed muffins all the time when I was in and never "popped". It is only if you eat them several times a day and they have an excessive amount of poppy seeds in them.

German Chocolate Pecan Pie

This is from Everyday with Rachael Ray, except I just used a store bought crust and sprinkled some extra chocolate chips on top right when it came out of the oven. Deeeelicious! I don't even like pecan pie!

5 tbsp butter
1/2 tsp salt
2 large eggs
1/2 c dark brown sugar (I used between 1/4 cup and 1/2 cup Splenda brown sugar and it turned out fine)
1/2 c light corn syrup (I used dark, also fine)
2 1/2 c chopped pecans
3/4 c sweetened flake coconut
3/4 c semisweet chocolate chips

In a medium bowl, whisk the eggs. In a heavy, medium saucepan, whisk together the remaining 5 tablespoons butter and 1/2 teaspoon salt with the brown sugar and corn syrup over medium heat until melted and smooth. Whisk the sugar mixture into the beaten eggs. Stir in the nuts and coconut. Spread the chocolate chips in the pie shell. Pour in the filling and bake at 375 degrees until set, about 25 minutes. Let the pie cool completely before slicing.

Thought I'd unload some snack ideas because I'm bored. Smile

Spinach Veggie Dip - Totally works with low fat dairy products if you'd like it a bit guilt free

16 oz sour cream
1 cup mayo
10 oz chopped spinach (1 frozen package, thawed and separated)
1 packet veggie soup mix

Mix together until well combined.



Pizza Dip
1 package cream cheese
1 jar pizza sauce
1 1/2 c mozzarella cheese
2 oz sliced pepperoni (1/4-1/2 package)

Press cream cheese in bottom of 9 inch pie plate. Spread pizza sauce, cheese, then pepperoni. Bake at 350 for 25 minutes.
*Feel free to add any other favorite pizza toppings, although it's delicious plain*

Use about 3/4 panko bread crumbs and 1/4 flour. I usually add some salt, paprika, red and black pepper, and sometimes onion powder to the mix. To get it extra crispy, dip the chicken in an egg wash first, then the breading mix, back in the egg, and then the breading again. Fry them in a pan with just enough oil to come 1/2 way up the side of the chicken. Try to turn them only once. Drain well on a cooling rack over a cookie sheet before eating (sets the crust).

Haha I like easy 10 minute recipes too! I seen a website, allrecipes.com. It has anything you can think of, and even different recipes for that. It's worth checking out. I've gotten some pizza ideas from there, pretty easy and quick, they taste excellant.
