I just laid around until noon then my grand daughter called and asked me for help, she cleans houses (not my cup of tea, she even cleans mine) She needed some lunch, paper towels and someone to fold and put away clothes. That's me.
Today I am making deviled eggs to take to a family party. Didn't sleep worth a darn and I'm not a happy camper when I don't sleep.......... |

Happy Easter... celebrate it while you can!
School Renames Easter Bunny 'Peter Rabbit' ABC News (April 7) -- A Rhode Island public school has decided the Easter bunny is too Christian and renamed him Peter Rabbit, and a state legislator is so hopping mad he has introduced an "Easter Bunny Act" to save the bunny's good name. BTW, I got up early because I had an early appointment. Gotta work on Easter Sunday, too. People need my tax dollars to survive. |

Does begging and pleading count as foreplay? |
Well, it's my oldest son's 27th birthday, so that makes today a good day. And since it's his birthday, my granddaughter is with us Sunday and Monday. The weather is cold, too cold to cut the grass. The gym is closed today, no 4 mile run and 30 minutes on eliptical and the bike. Sounds like a great day to me.

So are we! Going to take about 7 hours in the smoke chamber using charcoal and hickory chips in the fire chamber. Tomorrow, the missus and are are off for a week in the Monterey area staying at a nice place a few blocks from Point Pinos Light in Pacific Grove. Just got a couple of 2 gigabyte compact flash cards for my camera (about the equivilant of a hundred rolls of film) and expect to hawg wild (if the weather cooperates). We aren't bringing the laptop with us and will have to revert to a good book and other, more private things to do for entertainment. Happy Easter and Passover Greatings to all my friends (and enemies also). Peace! Mark |

Just took the brisket out of the smoker.
I start with a prime Kosher cut, usually about 3 1/2 lbs from the local Trader Joe's store. Kosher insures that there isn't a whole lot of additives to the meat. I don't need hormones and I get all the vitamins I need naturally from wholesom food. Kosher is usually more economical than "natural" or "organic" meats. I usually light off the charcoal an hour before the actual smoking begins. Then I put the cast iron box with wet hickory chips on the hot bed of coals. With the brisket itself, excess fat should be trimmed. Place the cut at about the middle of the smoke chamber and check the fire/hickory chips every 45 minutes. Your smoke chamber should be maintained at around 300 - 350 degrees. To prevent the meat from become dried out (and curling), I place a square roasting pan of water inside the smoking chamber. This not only maintains humidity in the chamber but catches the liquid fat that drips from the brisket itself. That's my story and I'm sticking with it. Time to eat! Have a happy one. Mark |

Just got back from skiing in maine at Sunday River. Spent the past three days enjoying family , extended family and friends ripping up some late season powder, 2' of the best snow and slope conditions all year. Got in some excellent back country tracks with the older kids and my younger brother. Hope you all enjoyed a happy easter or great weekend, which ever fits your life style.
